There's one mybe toooo sparkling, "Chez Michel Sarran", in Boulevard Armand Duportal 21, where you can sample some traditional Toulousian food with mains ranged 30-60 euros. Start with some "garbure", a cabbage soup with poultry, go on with "foie gras", the liver of an overfed duck or goose, a culinary masterpiece made in the Midi-Pyrenees. Convinced? Something more down-to-earth? Roasted wild black boar from the Bigorre region of France....
