There is a day in Paris when they don't sleep?(give a different answer) .
Well, they don't sleep during the white night - the Nuit Blanche as they call it, at a certain date in October. During this night all bars, and restaurants stay open untill dawn and people try to take advantage of that :) Even museums stay open. A very nice thing they have there in October :)
