I recommend you La Truye qui Filhe place, a colorful restored 14th century inn, located on 9 rue Fresque. I remember coming here almost every day during my stay in Nimes. It's a self-service restaurant only open for lunch but the food is very good and cheap and the ambiance is friendly. Opened from noon to 2 pm, menus max. 9 euro.
